Pizza Soup

Ran across this recipe saved on my computer. It really is good. Came from my friend, Kim. I of course, would make it without the "fungus." :-)

Pizza Soup


1 lb ground beef
1 small onion
2 cans of mushrooms
1 can diced tomatoes
1 large can tomato juice
2 small cans tomato sauce
1 pkg pepperoni
1 pkg mozzarella cheese

Italian Seasoning

Brown beef (add a little Fennel), Drain and put to the side.
Chop onion and sauté' in oil
Add mushrooms
Add diced tomatoes, tomato juice & tomato sauce
Add chopped pepperoni and beef.
Season to taste

I added Italian seasoning (probably a couple of tablespoons)
1 1/2 teaspoon of garlic powder.

If you don't have Italian Seasoning... it is basically basil, oregano, parsley and garlic just mixed together.

Cook it until it is fully heated through.
Serve with cheese.

If you don't have fennel, you can use half sausage/half beef! (fennel gives it a "sausage-y" taste) This is one of my favorite soups and it is so much better with the mushrooms!

Don't believe her! The fungus will ruin it! :-)
