Holiday recipe

I had to type this up for someone this morning, so decided to share it here too. It is really good, and a wonderful way to have cranberries on Thanksgiving Day.

Cranberry Relish Salad

1 package (3 ounce) of strawberry gelatin

1 cup boiling water

1/2 cup orange juice concentrate

1 package (12 ounce) fresh or frozen cranberries, chopped

1 medium apple, peeled and chopped

1 1/2 cup sugar

1/2 cup pecans


In a bowl, dissolve gelatin in boiling water.

Stir in concentrate.

Combine cranberries, apple, and sugar, add to gelatin mixture

Stir in pecans.

Pour into a 1 1/2 quart serving dish

Refrigerate for 4 hours or overnight

Yield 6-8 servings
