Really good recipe if you're looking for a good way to use zucchinis. I haven't personally made it, but I have eaten them, and I promise, they are good:
4 eggs
2 c. sugar
2 c. flour
3 c. grated zucchini
1 1/2 c. oil
1 tsp. salt
2 tsp. cinnamon
1 1/2 c. chopped nuts
2 tsp. soda
Beat oil, sugar, eggs until fluffy. Add dry ingredients and stir in the remaining ingredients. Spread in two 9 x 13 inch greased pans. Bake at 350 degrees for 25 minutes.
FROSTING:
1 (8 oz.) pkg. cream cheese
1 lb. powdered sugar
1 cube butter
2 tsp. vanilla
1/2 c. chopped nuts
Beat first 4 ingredients to spreading consistency. Add chopped nuts and spread on bars.

Drool! And frosting too! hehe Im going to try out this recipe in the near future. I had planned on making zucchini bread anyway so Ill make this instead and take it to the church brunch.
